MAKING HOT SAUCE
The Scoville Heat Unit (SHU) scale was developed in 1912 by William Scoville to rate the preserved heat of hot peppers. SHU rating identifies the parts per million of capsaicin in a pepper by stating the amount of water needed to make the heat undetectable by human taste buds. 
HOT PEPPER MASH
These pure pepper mash bases set the standard for quality. True gourmet hot sauce requires that the peppers be mashed and fermented. Most home hot sauce makers don't have the time to do this. Our pepper mash is ready to use as is or with any hot sauce recipe. Pure pepper not concentrate!
