A hundred years ago, living well meant a top hat, a
diamond stickpin, and the wherewithal to walk into a
swell chophouse and order a sizzling steak. A steak
so satisfying that by the end of the evening you'd
think about a run for the Senate or the possibility of
marrying into some royal family.

Things have changed, of course. A steak isn't a rarity
anymore. You can get one at the mall. But the sad truth
is, while ordinary steaks are everywhere, truly great
steaks -- inspirational steaks -- are still hard to find.
