 at the Heart of Las Vegas Boulevard

Caesars Palace in Las Vegas extends its dining empire to the most exciting corner on Las Vegas Boulevard with Viale, a modern Italian trattoria located on the forefront of the resort's five-acre Roman Plaza at the heart of the resort corridor's most popular attractions.

 

Inspired by the charming street cafes that are the hallmark of Rome's cuisine, Viale (which means "boulevard" in Italian) is a 230-seat indoor/outdoor restaurant that provides an ideal space for both casual meals and more sophisticated dining.  Open seven days weekly for lunch and dinner, Viale's cuisine is contemporary Italian, with a culinary nod to the specialties of Rome, serving pasta, pizza, panini, focaccete, salads and a wide array of dinner entrees.  This is the ideal place to meet friends and watch the excitement of Las Vegas passing by just steps away.

 

Where Classic and Modern Meet

 

Viale's dining room is awash with visual appeal.   Vibrant blues, oranges and yellows throughout the space provide a whimsical backdrop for the open kitchen and bar area.  Modern furnishings, like brushed silver tables and contemporary white curving chairs make for playful comfort.  Massive eye-catching striped chandeliers and classic black and white urns add flair to the beautiful surroundings, created by Barbara Gisel Design, of Haverford, Pennsylvania.

 

Outside, terraces dining area wrap around the restaurant to allow guests views of both the bustling street corner and graceful Caesars fountains.  Here is the opportunity for al fresco dining while relaxing in comfortable blue woven-basket chairs.  Terraces offer an incomparable setting for group and individual dining.

 

Mangia Like an Emperor

 

After a morning of gaming or touring the countless attractions in and near Caesars Palace, Viale is the perfect destination for a relaxing light lunch.  Chef Krista Kern, who teamed with Chef Jim Cohen at the Caesars Palace restaurant Terrazza, has taken the helm of Viale, developing a tantalizing menu of contemporary Italian cuisine.

 

A chilled glass of champagne, chardonnay or sauvignon blanc would be a splendid accompaniment to a plate of Sauteed Calamari with Shrimp, Fennel and Celery Hearts, or one of the many specialty salads, such as the Viale Winter Salad with Bartlett Pears, Gorgonzola, Frisee, Spicy Walnuts and Creamy Balsamic Vinaigrette

 

For more substantial lunch dishes, there is an assortment of entree salads and pasta dishes as well as Italian sandwich specialties.  Selections of grilled country bread panini include Grilled Summer Vegetables; Grilled Chicken with Salsa Verde; and Fontina Cheese, Roasted Red Peppers and Wild Mushrooms.  Focaccete are available with Baked Mozzarella, Slow-Roasted Roma Tomatoes, Pesto and Balsamic Onions; and Pancetta, Arugula, Heirloom Tomato and Herbed Mayonnaise.   The latter - Kern's playful "PLT" - is an Italian focaccia counterpart to the popular American BLT. 

 

As the sun sets and Las Vegas prepares to ramp up its slate of world-class entertainment and nightlife, Viale is the spot for some of the most flavorful dining on The Strip.   Mouth-watering starters are: Eggplant Parmesean with Parsley Salad and Balsamic "Brittle;" Grilled Prawns with Preserved Lemon Mayonnaise and Fried Artichoke Chips. Not-to-be-missed is the Caesar Salad with Ciabatta Croutons, Oven-Dried Tomato Chips and Parmesan Cheese.

                                                                            

With the neon lights brightening and the famous Caesars Palace fountains sparkling, guests move on to Penne Carbonara with Grilled Asparagus; or Farfalle with Sausage, Roasted Squash, Spinach and Pecarone.  Other dinner specialties include Grilled Halibut Livornese; Grilled Lamb Chops with Eggplant, Tomato, Olives and Basil-Mint Oil; and Veal Chop with Crispy Cured Ham, Sage, Cherry Tomatoes and Ricotta Potato Puree.

 

This is Sin City-which means desserts are always allowed-and Viale's selections are decadent enough to rank with any in town.  Try Maple Mascarpone Cheesecake or Buttermilk Panna Cotta with Poached Quince and Pomegranate Prosecco Bubble Broth.  There are also artisanal Italian chocolates and a selection of house-made Gelati or Sorbetti.  Each choice would be perfect with a double espresso or cup of coffee.

 

Walk-Ups are Welcome

 

Near Viale, the Roman Plaza features a circular bar called Spanish Steps and a free-standing beverage stand offering lemonade during warm weather seasons and specialty coffees during the city's brief cool weather.   Under the canopied Spanish Steps, guests can meet to enjoy selections from Viale's menu and specialty cocktails, like a lemony "Cello Viale," Bellini and an Espresso Martini.  In the Spanish Steps, the atmosphere is casual, and its permanent, modern tent-designed structure offers comfortable shade.

 

The walk-up beverage stand serves refreshing fountain and frozen varieties of lemonade - perfect to grab and go on hot afternoons.  Also available is a great selection of cocktails, including a "Mexican Melon" with Sauza Blanco Tequila and Midori; a "Twisted Lemonade" with Smirnoff Citrus Twist and Triple Sec; and a "Pucker Up!" with Bols Sour Apple.
