Storing and Thawing

Snow crab arrives in the form of frozen legs and claws. Frozen snow crab can be kept in a freezer for several months due to it's protective glaze. To thaw snow crab, place it in the refrigerator a day prior to cooking it. Left-over snow crab should be kept under refrigeration and used within a couple of days.

Snow crab is fished for within the Bering Sea and actually consists of two kinds of crab; Opilio and Tanner crabs. These fisheries started in the 60's and use the same methods that are used to capture king crab. Large pots are lowered to the ocean's bottom baited with herring and cod to let "soak" then lifted back to the surface to harvest the crab.

Fishing Seasons

Alaska's main commercial fishery for Snow crab starts in January and generally last for several months. It is considered one of the harshest fisheries due to the winter months that it takes place in.

Availability

When Snow crab is caught it is cooked and blast frozen to capture its quality. This commercial level of processing allows king crab to be kept frozen for long periods of time, up to a year or more. Frozen crab is glazed with an outer shell of frozen water to protect it from the elements. Because of the large size of this fishery and the abundance of Snow crab, it is available all year long.
