Storing and Thawing

Our vacuum-sealed frozen crab meat and merus sections can be stored for several month in a freezer. King crab meat can be thawed under refrigeration about 12 hours before preparation.
Left-over king crab should be kept under refrigeration and used within a couple of days.

Where is king crab caught?

Our king crab meat and merus meat is extracted from king crab that are caught in the annual Bristol Bay red king crab fishery. This is Alaska's main king crab fishery and produces the majority of Alaska's king crab. Bristol Bay's pure waters hold some of the largest king crab in the world.

Fishing Seasons

Alaska's main commercial fishery for Bristol Bay red king crab starts in October and generally last for several days. Approximately 250 boats fish hard for days on end until the annual catch quota is met. There are additional smaller red king crab fisheries in Norton Sound and Southeast Alaska.

Availability

When king crab caught it is cooked and blast frozen to capture its quality. This commercial level of processing allows king crab to be kept frozen for long periods of time, up to a year or more. Frozen crab is glazed with an outer shell of frozen water to protect it from the elements.
