Royal Ossetra is a Malossol (Russian for "low salt") caviar from the sturgeon fished in the Russian waters of the Caspian sea, and has a dark and rich color and incredible flavor. Royal Ossetra is very low in salt, and its subtle sweetness make it the perfect black caviar.

Generally ranging from light gray to almost black, Tzar Imperial Sevruga Caviar can at times be paler than the lightest Beluga.
