What is a Koogle? A Koogle is a Jewish dish. It is usually sweet, but sometimes a bit spicy (depends how it is being made). For a brief explanation of Koogles click here. Below is a picture of a Koogle along with some recipes. If you know of more recipes on how to make a Koogle, please send them here. Koogle No.1 - Shabbos Koogle 16 ozs noodles (I used medium width) 4 eggs (can use 5 if mixture doesn't feel right!) 1/2 Cup raisins 3 apples sliced fine (I use a combination of whatever types I have) 1 can crushed pineapple (do not drain) - 16 oz 1 to 2 tsp cinnamon (or more if desired) A dash or two of nutmeg 1/3 to 1/2 Cup sugar 1/4 Cup oil 1/2 tsp salt Cook and drain noodles. In a bowl combine all ingredients except noodles.Mix well with a fork. Add noodles, combining until noodles are well coated with mixture.Pour into 13 x 9 inch baking dish. (I coat the dish with Wesson spray first).Bake in a 325 degree oven for about 45 mins to 1 hour.Check part way through to make sure the top noodles are not over-browned. If they are getting dark, lay a sheet of aluminum foil over the top. Koogle No.2 - Noodle Koogle 6 eggs 1/2 pint of sour cream 1 1/2 cup of sugar 1/2 teaspoon of cinnamon 1 teaspoon of vanilla 1 pound of broad egg noodles 1/4 pound of margarine, melted Raisins to taste Pinch of salt (while boiling noodles) Boil and drain noodles. Combine and mix eggs, sour cream, sugar and cinnamon. Add other ingredients. Sprinkle with cinnamon. Bake in 9 x 13 inch pan at 400 degrees for 45 minutes to 1 hour. Koogle No.3 - Matzo Koogle (for Passover) 2 cups chopped red onion 2 cups sliced leeks 4 tablespoons butter or margarine 4 matzos, broken into pieces 6 eggs, beaten 2 tablespoons chopped fresh sage Salt and freshly ground pepper, to taste Grease a 2-quart baking dish. Heat oven to 350 degrees. Combine onion, leeks and 2 tablespoons of butter in a wide skillet over medium-high heat. Cook until vegetables are soft and translucent. Place matzo pieces in a bowl and cover with hot water long enough to soften them, but not until they break down. Drain well. Mix onions, leek, matzos, eggs, sage and salt and pepper. Pour the ingredients into a casserole and bake 20 minutes. Dot the top of the kugel with the remaining 2 tablespoons of butter and bake another 15 minutes. Serves 6 to 8. Koogle No.4 - Potato Koogle 6 big potatoes 2 big onions 3-4 eggs 2 t baking powder Salt Pepper ½ cup Matzo meal ¾ cup oil Cut potatoes and onions to chunks, and cut in food processor using knife. Make sure to stop the machine while still in tiny pieces, before they become watery and mushy. Add rest of the ingredients. If too watery – add matzo-meal. Season with a bit over dose of black pepper. Pour into oiled pan, or covered with baking paper. Bake for about an hour, 225 (Cen) or until brown on top.
