Ready for some fish recipes to prepare your catch of the day. Preparing seafood is a lot easier than you may think.  Most people just don't know where to begin.

There are many ways to prepare your fish so that it doesn’t taste fishy!

I enjoy cooking what I catch and I would like to share my recipes with you.   Some are a little more exotic but most of them are easy to prepare.

You will find that some of the recipes you could substitute chicken and have a new chicken recipe.

Have you ever wanted to publish your favorite recipe? If you have a favorite seafood recipe that you would like to share just let me know and it will be featured along with my favorites!

Fish is considered to be very healthy since it has a high percentage of protein with little fat.   Salmon and Mackerel have Omega 3 oil which is good for the heart.

The Food and Drug Administration is a great resource for information about seafood.

These fish are excellent blackened…Salmon, Tuna, Snapper and Dolphin. You will need the following to prepare blackened fish:

• Outdoor grill
• Seasoned cast iron skillet
• Seasonings

It takes less than 10 minutes to prepare a delicious meal. Make sure the fish is fileted with no skin or bones.

Pre-heat the grill on high with the skillet on the rack. Season the fish with blackened seasoning then add a tablespoon of butter to the hot skillet.

Immediately add the fish and turn once after 2-3 minutes. Make sure the lid stays closed. Then serve with your favorite side dishes!

*Tip* Suggested favorite seasoning is Chef Paul Prudhomme’s Blackened Redfish Magic
