Collecting wine and storing it in an organized, esthetic fashion is a priority for many of us. But remember, the temperature of your wine cellar or cabinet is also of utmost importance. Here are some items to watch out for when cellaring your precious investment:
- Warm temperatures age your wines prematurely. A bottle of wine stored at room temperature (70F/21C) will age twice as fast, robbing it of the flavours and complexities you would expect in a wine stored in proper cellar conditions. Interestingly, the chemical reaction rate in a bottle of wine doubles with every 18F or 10C.
- Large fluctuations in storage temperatures could introduce oxygen to your wines. When your wine cellar conditions fluctuate from the optimal temperature of 55-57F/12-13C to 70F/21C, the expanding and contracting pressures in the bottle pose a serious risk.
- A room with humidity levels less than 50% can dry out cork. Optimally, you would like to store you wines in a room from 50-70% humidity. Forced air heating and other factors can rob your cellar of this necessary partner.
- Vibration from refrigerators or compressors can affect the taste and brilliance of the wine. Sediment gets mixed through the wine bottle never letting it truly rest.
