The Aging Process

To make a wine and serve it optimally, you need to be assured of creating the balance of aromas and flavours of youth and those, more complex, of evolution.  This will depend on three essential criteria:  grape variety, soil and winemaking.  Soil, a special climate and low production are factors allowing for the making of wines with complex aromas and powerful flavour.  The ageing process call for a long wait before the wine attains its tasting peak.

What Factors Guarantee Good Aging?

Alcohol:  grape sugars are transformed into alcohol thanks to the yeast on the grape skin.  Alcohol richness is essential but not sufficient for balance.
Acidity:  a vintage always has a good acidity which is present in the berry and diminishes gradually during grape ripening before the harvest.  The balance between theses two factors is the key to long life, for white wine in particular.


Transformation of Tannins

For reds, tannin content and quality will give the wine the structure to develop long life.  Good tannins are to be found on grape skins and are extracted during maceration.  Colour richness also depends on tannins.

 

It is impossible to make general rules about how long any given wine will age, but it is certain that many Cabernet Sauvignons will indeed age 5-7 years and more that will age for decades (the richer, more expensive selections)
