Snapper

Mutton Snapper is one of the popular fish found in South Florida along with Yellowtail Snapper.
Usually I catch Mutton Snapper at about 5 pounds. They have been known to get about 35 pounds.

When fishing for Snapper they suspend about four or five feet off the bottom. Most Mutton's are caught using a weight with a sardine and when you are letting it drop towards the bottom.

When the fish is trying to eat the sardine you will feel a tap, tap, tap on your line. Let the rod tip down to the water. Then pull the rod up quickly for setting the hook. You must do this quickly to keep them off the rocks on the bottom. You can use light tackle with this method for keeper sized fish.

There are many delicious ways to prepare these fish. The Mexican Mutton as you can see is a beautiful dish if you are looking for something south of the border.

The Baked Mutton Snapper as to be eaten a little more delicately since you are eating around the bones. Cooking the whole fish certainly gives it a more succulent flavor.
