Barbeque Baked Salmon Recipe
Ingredients:
Butter or olive oil
5 cloves garlic, crushed
1 tbsp fresh diced dill
½ lemon, juiced
Fresh sockeye are one of the finest of meals, with a very succulent flesh. Use some wood chips for smoke flavor.
Take a stick of butter, or equivalent of olive oil, and to it add 5 cloves crushed garlic, 1 Tbsp fresh diced dill, and the juice of 1/2 lemon.
Place fillets on foil-lined grill rack, skin side down. Combine above and baste on fillet. Cook until flesh just turns color and firms up. Most people overcook fish -- it needs to just firm up, as can be confirmed by flesh color changes from its uncooked red color to more of a salmon/pink color.
This baked salmon recipe makes a delicious dish which goes really well with some basmati rice prepared with sautéed onions and saffron.
