Bagel
The bagel is a food traditionally made of yeasted wheat dough in the form of

* Banana Rhubarb Muffins
Ingredients:
2 Egg whites or 1/4 cup cholesterol free egg product
2/3 c Skim milk
1/4 c Vegetable oil
2 c Oat flour blend
1/2 c Sugar
1/2 c Mashed ripe banana
1 tb Baking powder
1/2 ts Salt
1/2 ts Nutmeg
2/3 c Chopped fresh rhubarb or frozen rhubarb, thawed and well drained
Procedure:
Preheat oven to 400 F. Spray bottoms of 12 muffin pan cups with vegetable cooking
spray or line with paper baking cups. In medium-sized bowl beat egg whites with
fork; stir in milk and oil. Add remaining ingredients except rhubarb, mixing just
until flour is moistened (batter will be lumpy). Fold in rhubarb. Divide batter
among prepared muffin cups, filling to top. Bake 20 to 25 minutes, or until golden
brown. Immediately remove muffins from pan; cool on wire racks.
*Rhubarb Muffins
Ingredients:
1/2 c. salad oil
2 c. milk
1 tsp. vanilla
2 eggs
5 c. Flour
1 1/3 c. sugar
2 T. baking powder
1 tsp. salt
4 c. thinly sliced rhubar
Procedure:
Mix on low speed the oil, milk, vanilla and eggs. Add all at once all remaining
ingredients except rhubarb, mixing on low speed. Foldin rhubarb. Fill muffin tins
3/4 full, and sprinkle each top with cinnamon-sugar mixture. Bake at 375F for
17-23 minutes.
Note:
If using a dark colored pan, reduce the oven temperature, stated in the recipe,
by 25 degrees F. (This is because dark colored pans absorb more of the energy
coming from the oven walls so they become hotter and transmit heat faster than
light colored pans.)
Resist the temptation to add more baking powder to your muffin recipe, thinking
it will give you higher muffins. If you over leaven your batter it will cause
the muffins to over inflate when baked, which weakens the structure and will cause
the muffin to collapse. This will result in a heavy, compact textured muffin.

Pumpkin Muffins
2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
2 cups pumpkin puree
2 eggs
1/2 cup brown sugar
1 teaspoon vanilla
1/3 cup finely chopped crystallized ginger
1/2 cup chopped pecans
Into a large bowl, sift flour, baking powder, baking soda, cinnamon, and salt.
Toss lightly with a fork. In separate bowl, combine pumpkin, eggs, brown sugar,
and vanilla; stir well. Make a well in center of dry ingredients; pour in pumpkin
mixture. Add ginger and pecans and stir just until ingredients are moistened.
Do not overmix. Line 12-cup muffin tin with paper liners or grease well and dust
with flour. Fill the about 2/3-full with the pumpkin muffins batter and bake at
400° for 20 minutes. Remove pumpkin muffins and cool. Makes 12 pumpkin muffins.

Bannocks Recipe
1 pound of fine oatmeal
1/2 ounce of baking powder
1 ounce of butter
1 teaspoon salt
Mix together the oatmeal and baking powder, rub in the butter, and make into a
stiff dough with water. Roll out as thin as possible; cut into rounds with a tumbler.
Butter a frying-pan, and cook a few at a time; when done on one side, turn carefully.
Serve with butter or syrup. If more convenient they may be cooked on a well heated
soapstone griddle and turned with a cake lifter.

Cracker Crumb Mixture
This rich crumb topping keep well on the pantry shelf or in the
refrigerator. Halve the recipe if you use crumbs sparingly.
Whirl the crackers in a food processor or put them through a food grinder
until they are evenly ground but retain some texture. Saute the onions in 2
tablespoons of the butter, then add to the crumb mixture along with the
remaining butter, parsley and thyme. Mix thoroughly. If the mixture hardens
in the regrigerator, place it in the oven on low heat for a few minutes
before using. (Makes about 9 cups).

Procedure:
Heat the butter in a saucepan, and once sizzling add the onion and garlic. Cook
for about three minutes and then add the brandy. Cook until the brandy has almost
completely evaporated. Add the tomatoes, salt, pepper, red pepper flakes if using,
and half the parsley. Cook for about 20 minutes or until thickened. Stir in just
enough of the heavy cream to turn the sauce a dark coral pink color. Stir in the
lobster meat, and keep warm.
Cook the spaghetti until it is al dente. Drain. Toss the pasta with the lobster
sauce, and serve garnished with a sprinkling of the remaining chopped parsley.

- Select a sturdy box for shipping.
- Pack cookies or bars in gift tins or sturdy gift boxes with waxed paper placed

Reviews
The Pie and Pastry Bible begins with the crust. The author confesses right up front
that 21 years ago, when she first began her quest for the perfect crust, "it
was a complete mystery to me." She wasn't looking for a once-in-a-lifetime

History
According
to legend an Arabian goatherd named Kaldi found his goats dancing joyously around
a dark green leafed shrub with bright red cherries in the southern tip of the
Arabian Peninsula. Kaldi soon determined that it was the bright red cherries on
the shrub that were causing the peculiar euphoria and after trying the cherries
himself, he learned of their powerful effect. The stimulating effect was then
exploited by monks at a local monastery to stay awake during extended hours of
prayer and distributed to other monasteries around the world. Coffee was born.
Despite the appeal of such a legend, recent botanical evidence indicates that
Coffea arabica originated on the plateaus of central Ethiopia and some how must
have been brought to Yemen where it was cultivated since the 6th century. Upon
introduction of the first coffee houses in Cairo and Mecca coffee became a passion
rather than just a stimulant.

has been a medical whipping boy for so long that it may come as a surprise that
recent research suggests that drinking moderate amounts of coffee (two to four
cups per day) provides a wide range of health benefits. Most of these benefits
have been identified through statistical studies that track a large group of subjects
over the course of years and match incidence of various diseases with individual
habits, like drinking coffee, meanwhile controlling for other variables that may
influence that relationship. According to a spate of such recent studies moderate
coffee drinking may lower the risk of colon cancer by about 25%, gallstones by
45%, cirrhosis of the liver by 80%, and Parkinson's disease by 50% to as much
as 80%. Other benefits include 25% reduction in onset of attacks among asthma

Tea
There are so many different types of tea that it may come as a surprise to
learn they are all made from pretty much the same
plant. Of course, some are flavored with essential oils or fragrant herbal additives,
but the basic ingredient, the tea leaf itself, comes from the Camellia sinensis
plant. It should perhaps be clarified at this point that we are talking about
caffeinated teas, not "herbal" ones. Herbal teas have only come to be
called teas because they are steeped the way the real thing is. Officially, an
herbal tea -- that is, one made completely from dried mint leaves or chamomile
blossoms or rose hips or any combination of herbs and spices that does not include
the leaves of the tea plant -- is actually an infusion or a tisane.
Four types of tea
Black, Green, Oolong, and White
*Black tea is withered, fully oxidized and dried. Black tea yields a hearty, amber-colored brew.
*Green tea skips the oxidizing step. It is simply withered and then dried.
*Oolong tea, popular in China, is withered, partially oxidized, and dried. Oolong
is a cross between black and green tea in color and taste.
*White tea is the least processed. A very rare tea from China, White tea is not
oxidized or rolled, but simply withered and dried by steaming.

The tea plant itself is a native of Southeast Asia. The tea brewed from the
dried leaves of this plant has been drunk in China since perhaps the 28th century
bc and certainly since the 10th century bc, from which time written records of
its use survive. It was first brought to Europe by the Dutch in the early 17th
century ad. After the introduction of tea there in 1657, England became the only
European country of tea drinkers rather than coffee drinkers. Tea was introduced
into North America by early settlers but was heavily taxed by the British, eventually
resulting in the well-known Boston Tea Party of 1773, and it has never competed
successfully with coffee as the staple beverage.
Tea is an aromatic stimulant, containing various polyphenols, essential oils,
and caffeine. The concentration of caffeine in tea ranges from 2.5 to 4.5 percent,
as contrasted to an average concentration of about 1.5 percent in coffee.
The Categories of Chinese Tea
Green tea: Green tea is the variety which keeps the original colour of the tea
leaves without fermentation during processing.
Black tea: Black tea is the category which is fermented before baking; it is a
later variety developed on the basis of the green tea.
Wulong tea: Wulong tea, known as oolong. This represents a variety half way
between the green and the black teas, being made after partial fermentation.
Compressed tea: This is the kind of tea which is compressed and hardened into
a certain shape. It is good for transport and storage and is mainly supplied to
the ethnic minorities living in the border areas of the country.
Scented tea: This kind of tea is made by mixing fragrant flowers in the tea
leaves in the course of processing. The flowers commonly used for this purpose
are jasmine and magnolia among others.

Soy milk
Vegans and people who are lactose intolerant appreciate soy milk as a dairy-free
substitute in milkshakes, puddings, soups, and creamy sauces. But those who drink
milk have much to gain from soy milk, too. Because it is made from beans, soy
milk contains fiber (dairy milk has none); it's a good source of protein and,
although it contains more fat than reduced-fat (2%) milk, it is low in saturated
fat and cholesterol-free.
Milk

Milk, highly nutritious, versatile food. People enjoy drinking milk in its
natural form and also use it to make a wide range of food products, including

Most milk is composed of 80 to 90 percent water. The remaining 10 percent consists
of an abundance of the major nutrients needed by the body for good health, including
fats, carbohydrates, proteins, minerals, and vitamins.
Milk contains many minerals, the most abundant of which are calcium and phosphorus,
as well as smaller amounts of potassium, sodium, sulfur, aluminum, copper, iodine,
manganese, and zinc. Milk is perhaps the best dietary source of calcium—one
liter (about 1 qt) of milk supplies as much calcium as 21 eggs, 12 kg (26 lb)
of lean beef, or 2.2 kg (5 lb) of whoSle wheat bread. Milk is an excellent source
of vitamins A and B2. All other vitamins are present also, but in lower doses.
Vitamin D is typically added to commercially sold milk. Vitamin A, which is found

A study showing a beer a day may help keep heart attacks away adds to growing
evidence that moderate alcohol consumption may reduce heart disease.
Following beer drinking, participants in the study were found to have decreased
cholesterol levels, increased antioxidants and reduced levels of fibrinogen —
a clot-producing protein.
However, scientists warn that moderate drinking still cannot be directly linked
to a lower heart-attack risk. Some studies suggest that lifestyle factors such
as diet and exercise may help account for some of the association between lower

alcoholic beverage typically made by fermentation of grapes.
The History of Wine
In ancient times, there was no such thing as good drinking water. And since people
wanted something to drink with their meals, wine was a wonderful alternative.
There are some indications that wine was being produced as far back as 6000 B.C.
in Mesopotamia. Markings on stone tablets and tomb walls show evidence that the
Mesopotamians had some idea of how to make wine from grapes. The wine was probably
very crude compared to what we drink today, but it was better than the water available
for drinking.
In the 17th century, people found other sources for their excessive indulgences,
like hard liquor, beer and ale, tobacco, chocolate, and coffee and tea. Wine had
lots of competition.It was kind of ironic that the industry was actually forced
to compete with itself, when it created Champagne.
Other important developments in the 17th century were the use of glass bottles,
the invention of the cork, the cork screw and other accessories. Also, improved
production techniques created more palatable wines. The wine industry was re-emerging.

Chateau du Plantier 2000 Bordeaux. This one had a nice smoothness to the cherry
and berry fruit profile. Not spectacular, but a good straightforward red wine
that would be versatile with a wide range of foods.
Dom. Barons de Rothschild (Lafite) 1999 Bordeaux Reserve Speciale. Good black
cherry and berry fruit with touches of sweet mineral, earth, and herbs. Ready
to drink now.
Chateau Fontenil 1999 Fronsac. Enough to make me want to buy lots of Fronsac!
Juicy red cherry and blackberry fruit with smooth vanilla and spicy espresso notes.
Ready to drink now and over the next year or two.
