Kasilof, Alaska, adjacent to the Kasilof River and the Sockeye

Smoked Salmon Stuffed
Sweet Onions

4 lg. Sweet
Onions |
2 tbsp. Butter |
1 cup Frozen Peas |
2 tsp. Italian Seasoning |
1/2 cup Mushrooms, sliced |
Salt & Lemon Pepper
to taste |
1/2 carrot,
shredded |
Chicken or Seafood Bouillon |
1 can Ed's Smoked Wild Salmon |
1 cup Water, hot |
Preparation:
Start by dissolving bouillon in hot water and set aside.
Prepare onions by slicing off the top portion of onion
and hollowing out center (leaving 2-3 layers to form
the shell). Place hollowed onions into a lightly greased
baking dish. Use a large bowl to combine smoked salmon,
peas, carrots, mushrooms, italian seasoning and salt.
Equally divide mixture into 4 onion shells. Top each
onion with a portion of butter and season to taste with
lemon pepper. Pour water mixture over onions and into
bottom of dish, cover baking dish and bake in a preheated
350 degree oven for 20-30 minutes or until onions are
tender.
