How to fillet Cero Mackerel


The Cero Mackerel is the best tasting of all the Mackerel's. It has the opposite taste of the King Mackerel.

The skin can be left on or removed. When you leave the skin on it adds flavor and valuable essential fish oils that are good for the heart. It can be prepared many ways...baked, broiled or smoked.

The first step in filleting the fish is to slice right behind the pectoral fin.

Then slice along the dorsal fin all the way to the tail. Next slice along the stomach to the tail. You should be able to fold the fillet back and finish slicing the fillet from the fish.

To remove the center bones from the fillet take the fillet knife and slice straight down on one side and then slice along the other side along the bones. This should strip the bones out of the center of the fillet. There should be a small V shape in the center where you removed the bones.

Wash thoroughly, chill and prepare to cook.
