Dolphin is a specie of fish that is caught close to the surface around floating debris. Most of the time dolpin are caught trolling skirted baits.
Skirted baits are rigged ballyhoo with a lure that has a skirt on it and creates turbulence in the water. Another method is drifting with dead ballyhoo or live pilchard.
Circle hooks are very effective when using these types of baits because you don't have to set the hook. Therefore there is less chance of the acrobatic fish from spitting the hook out. These fish are notorious for being in schools and will come to the boat in such manner.
Once you have caught some dolphin you will need to know how to fillet them. Here in Florida the minimum size is 24 inches and ten per person.
Dolphin are delicious when prepared as Dolphin Fingers. This is a simple and easy to prepare meal. If you like portabella mushrooms then you will love them stuffed with Dolphin.
