Our main seafood processing plant is located in
Kasilof, Alaska, adjacent to the Kasilof River and the Sockeye
salmon
fishing grounds of Cook Inlet. All of our

All of our Alaska wild salmon and Alaskan seafood
products will need to be kept refrigerated because they are
all natural and contain no additives or preservatives.

| 1 can whole berry cranberry
sauce |
1 Tablespoon soy sauce |
| 1 Tablespoon grated fresh
ginger |
1/3 Cup packed dark brown
sugar |
| 1 Tablespoon cornstarch |
1 Cup cranberry juice |
| 1 Cup dark honey |
4-6 ounces salmon fillets,
skin on |
| 1/2 Cup soy sauce |
1 orange, (juice and zest
only) |
1
Cup fish stock, undiluted (or fish fumet)** |
| Preparation:
Pour
cranberry juice in a Ziploc bag, and add filet. Zip
and let sit in refrigerator 30 minutes. In a small saucepan
whisk together remaining ingredients, bring it to a
boil over medium heat and cook 5 minutes, stirring frequently.
Pour glaze into a 9-x-13 inch glass-baking dish and
let cool 20 minutes. Place fillets skin side up in glaze,
cover and refrigerate 2 hours. Preheat barbecue to medium-high
and oil the grill. Remove fillets from glaze and place
on grill skin side up. Sear salmon for 2 minutes, turn
over, cover and cook another 8-9 minutes until salmon
just flakes. Alternatively, place salmon on grill skin
side down and cook, covered, for 11 minutes. Be careful
as glaze burns easily. Pour remaining glaze into a small
saucepan and boil 1 minute over medium-high heat. Serve
salmon with the hot glaze, skin side down. It will disappear!
