Collins, who's had the shop for 40 years, says he began making chicken salad four years ago. He gets up at 5 each morning to cook the birds. During the season, Collins, or "sweet-talking George" as his friends call him, makes 100 pounds of chicken salad a day. This time of year, he makes 40 to 50 pounds a day. It sells for $3.99 a pouind.
Customers like it, he says, because he keeps the recipe simple -- Perdue boneless chicken breasts finely ground, chopped celery, and just enough mayonnaise to keep it from being dry.
Rotisserie chicken, which sell for $2.99 or $3.99, are big sellers too. During the last 10 years, more than 279,000 chicken have been sold a George's Meat Market. The shop makes its own sausages and brats, ready-to-cook 3-pound meatloaf for $5.99, barbecued ribs with sauce for $2.99 a pound, and stuffed pork chops for $2.99 a pound.
"When we opened 40 years ao, we sold our ham salad for 99 cents (a pound) and we still do. It's a tradition," Collins says. "We're just about as old-fashioned as we can be."
