Pineapple Dessert Dumplings

  • 2 cups canned pineapple pieces
  • juice from canned pineapple
  • 2 tablespoons cornstarch
  • 2 tablespoons butter or margarine
  • 2 tablespoons lemon juice
  • 1 cup light corn syrup
  • 1 recipe Dessert Dumplings (see below)
Drain juice from pineapple. Combine juice and cornstarch in a medium size saucepan. Place over medium heat and cook, stirring occasionally until mixture boils and thickens. Stir in butter or margarine, lemon juice and light corn syrup. Put in pineapple and bring to a gentle boil.

Meanwhile prepare Dessert Dumpling batter.

Pour hot pineapple mixute into 1 1/2 quart baking dish. Drop dumpling batter by spoonfuls over the hot pineapple. Bake at 400 deg. F. for 20 to 25 minutes.

Dessert Dumpling Batter

  • 1 cup sifted flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 teaspoon sugar
  • 1/4 teaspoon nutmeg
  • 1/4 cup milk
  • 1 egg
  • 1/4 cup corn oil
Sift together the flour, baking powder, salt, sugar and nutmeg. Add the egg to the milk and mix slightly. Add the corn oil and stir, combine ingredients and blend. Drop batter by spoonfuls over hot fruit mixture. Bake at 400 deg. F. for 20 to 25 minutes.

This dessert recipe will serve 6 to 8.

Butter Brickle Dessert Recipes

  • 2 cups flour
  • 1/2 cup oatmeal
  • 1/2 cup brown sugar
  • 1 cup chopped nuts
  • 1 jar Kraft caramel sauce
  • 1 pint vanilla ice cram, softened
Preheat oven to 400 deg. F. Melt margarine. Add flour, oatmeal, brown sugar and nuts. Pat thinly on large cookie sheet. Bake at 400 deg. F. apporx. 15 minutes or until light brown. Crumble above mixure while hot and spread on bottom of 9x13 inch pan. Drizzle 1/2 jar of caramel sauce over crumbs. Spread ice cream over top and then the remaiining crumbs over the ice cream. Drizzle the rest of the caramel sauce over everything. Freeze.

Layered Banana Pineapple Dessert Recipes

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/3 cup melted butter or margarine
  • 2 medium bananas, sliced
  • 8 ounce cream cheese, softened
  • 2 1/2 cups cold milk
  • 1 pkg. (6 ounce) Jello vanilla flavor instant pudding
  • 1 (20 ounce) can crushed pineapple, drained
  • 3 1/2 cups (8 ounce) Cool Whip, thawed
Combine crumbs, sugar and margarine; mix well. Press firmly into bottom of 13x9 inch pan. Bake in preheated 375 deg. F. oven for 8 minutes. Cool.

Arrange banana slices on crust. With electric mixer on low speed, beat cream cheese until smooth. Gradually add 1/2 cup cold milk; blend until smooth. Add remaining milk and pudding mix; beat at low speed until well blended, approx. 2 minutes. Spread evenly over bananas in pan. Evenly spread drained pineapple over pudding mixture. Spread whipped topping over pineapple. Chill 3 hours.

Cream Cheese Pudding Dessert Recipes

  • 1 1/2 pounds graham crumbs
  • 1/2 cup sugar
  • 1/3 cup butter or margarine, melted
  • 8 ounce cream cheese, softened
  • 2 1/2 cups plus 2 tablespoons milk
  • 3 1/2 cups (8 ounces) Cool Whip, thawed
  • 1 (6 serving size) pkg. Jello instant pudding, any flavor
Combine graham crumbs, 1/4 cup sugar and melted butter; mix well. Press firmly into bottom of 9x13 inch pan. Chill 15 minutes.

Combine cream cheese, remaining sugar and 2 tablespoons milk in medium bowl. With electric mixer at medium speed, beat until smooth. Fold in 1 3/4 cups of the whipped topping. Spread over crust.

Pour remaining milk into bowl. Add pudding mix. Mix with electric mixer at low until well blended, 1 to 2 minutes. Pour over cream cheese layer in pan. Chill several hours.

Just before serving, spread remaining whipped topping over pudding. Garnish with chocolate curls.

Broken Glass Dessert Recipes

  • 3 pkg. Jello, bright colors

    Crust:

  • 1 cup graham cracker crumbs
  • 1/2 cup brown sugar
  • 1/4 cup melted butter
  • 1/4 teaspoon cinnamon

    Filling:

  • 1 envelope plain gelatin
  • 1/4 cup pineapple juice
  • 1 pint whipping cream, sweetened with 1/3 cup sugar, or Dream Whip
Set three bright colors of Jello in square pans, separately.

Crust: Mix all ingredients together; pat into a 9x13 inch pan.

Filling: Dissolve gelatin in a little water. Add gelatin and pineapple juice to whipped cream.

Cut the Jello in cubes; mix gently into the whipped cream mixture. Pour over the crust. Chill for at least 2 hours.

Fruit Cocktail Dessert Recipes

  • 1 egg
  • 1 cup sugar
  • 1 teaspoon soda
  • 1 cup brown sugar
  • 1 cup sifted flour
  • 1 can (no. 2) fruit cocktail mix, drained
  • 1 cup chopped nutmeats
Combine egg, flour, white sugar, soda and fruit. Pour into greased 8x8 inch pan. Mix brown sugar and nuts. Sprinkle over batter. Bake at 350 deg. F. for 35 minutes. Delicious warm or cold topped with whipped cream or non-dairy topping or ice cream. Very tasty.

Angel Food Dessert Recipes

  • 1 envelope Knox gelatin
  • 1/2 cup cold water
  • 1/2 cup boiling water
  • 1 6 ounce can frozen orange juice or lemonade
  • juice of 1/2 lmon
  • 1 cup sugar
  • 1/2 angel food cake
  • 1 pint cream or Cool Whip
  • 1 20 ounce can crushed pineapple, drained
Dissolve gelatin in cold water. Add hot water and stir, until clear. Add orange juice, lemon juice and sugar. Chill until slightly thickened. Break angel food cake into bite size pieces and stir so cake is well coated. Can be made a couple days ahead of time - also freezes well.

Caramel Dumpling Dessert Recipes

  • 1 cup brown sugar
  • 1 1/2 cups water
  • 2 tablespoons butter
  • 1/2 cup white sugar
  • 1/2 cup milk
  • 1 cup sifted flour
  • 1 teaspoon baking powder
  • pinch of salt
  • 2 tablespoons butter
Caramelize brown sugar and butter. Add water and boil a few minutes. Cream sugar and butter together. Add milk. Sift flour, baking powder and salt. Drop by spoonful into caramel syrup and bake in moderate oven at 350 deg. F. for 20 to 30 minutes. Pan size 8x12 inch.

Bridge Dessert Recipes

  • 2 1/2 cups graham wafer, crushed
  • 1/2 cup melted butter
  • 2 eggs
  • 1 1/2 cup icing or confectioners sugar
  • 1/2 cup melted butter
  • 1 can crushed pineapple
  • 1/2 pint whipping cream
Crush 2 1/2 cups graham wafers. Save about 1/4 cup to sprinkle on top. Mix with 1/2 cup melted butter and press into 9x9 inch pan and put in 350 deg. F. oven for 10 minutes. Mix 1 1/2 cup icing sugar with 1/2 cup melted butter. Add all of 2 eggs and beat until smooth. Spread on crust after it has cooled. Drain juice from 1 can crushed pineapple. Fold into 1/2 pint stiffly beaten whipped cream. Spread on top and sprinkle remaining crushed graham crackers. Place in refrigerator overnight.

Pina Colada Dessert Recipes

    1 pkg. (8 ounce) cream cheese, softened
  • 1 1/2 cup whipped topping (Dream Whip, Cool Whip, etc.)
  • 1/2 cup sugar
  • 2 tablespoons rum or 1/2 teaspoon rum extract
  • 1 can (8 1/2 ounce) crushed pineapple in syrup
  • 2 2/3 cup (7 ounce) flake coconut
Beat cream cheese with sugar and rum until smooth. Fold in 2 cups of the whipped topping, pineapple with syrup and 2 cups coconut. Spread in 8 inch layer pan lined with plastic wrap. Put in freezer for about 1 hour. Invert pan onto a plate. Remove pan and plastic wrap. Spread with remaining whipped topping and sprinkle with coconut. Freeze until firm. Garnish with pineapples and cherries.

*This freezes well and can be made ahead of time. Take out of freezer and put in refrigrertor two hours before serving.
