We use the BIG commercial roasters and flame roast our Chiles, sweat/steam them, then package them in 1 pound freezer bags and freeze them solid in -20 below zero freezers. Our Chiles keep their flame roasted peels on them, so as to protect the "meat" of the Chiles from any freezer burn and this process also keeps in the thin layer of flavor between the Chile and it's skin. Leaving you with a whole "pristine" Chile, not a tub of water and tasteless chopped up Chiles. Plus the peels slide off relatively easy when thawed.
