To make thin tortillas, let the dough rest at least an hour before cutting and rolling it.

Making your own whole-wheat tortillas is worth the effort

Tortillas are a staple of Mexican cuisine and, over the years, have become a growing part of Canadian diets, as well. Every supermarket now stocks them -- a clear indication that Canucks are using them frequently to make Mexican-style dishes, wraps and other creations.

Smoked Salmon Tartare on Cucumber Rounds

Smoked Salmon Tartare on Cucumber Rounds

Akis's recipe for simple Smoked Salmon Tartare on Cucumber Rounds, presents a significant spin on the classic dish beef tartare in which raw meat is chopped and mixed with tangy flavourings and displayed in patty-like form on a plate. The recipe is from his latest book, Everyone Can Cook for Celebrations. In this version, finely chopped smoked salmon replaces the beef. The tartare mixture is spooned on palate-refreshing slices of cucumber, making for a decedent appetizer.

Summer Pudding: This recipe takes three days to prepare, so advance planning is necessary.

English summer puddings combine cream and tart flavours

This is the time of year to pass on spotted dick. Now don't be alarmed, it's just a dessert, but not one I'd recommend in the heat of July. I'd also avoid sticky toffee pudding, bread pudding, roly-poly pudding and Bakewell tart. Heavy on the suet, treacle, ground almonds and/or raisins, these puddings are far too wintry.
