Lentil (Lens culinaris)

Today, Canada is the world's largest exporter of lentils to the global marketplace, selling to over 100 countries each year.  The most commonly grown lentils are the large green lentil (Laird-type) and the red lentil.  Small and medium sized green lentils are also common as well as limited quantities of Spanish brown, French green and beluga lentils.

Significant lentil processing also takes place in Canada, including dehulling, splitting and milling of red and green lentils.

The majority of Canada's lentil crop is grown in the province of Saskatchewan.  Lentils are also grown in southern Alberta.
