Even before I ever heard of the Cinco de Mayo celebrations, I've always craved Mexican food this time of year. I guess it's the warm weather that causes chips, dips, Margaritas and sizzling meat to call my name. Of course, you can't eat those foods without having dessert afterwards.

I just couldn't help myself. Sam's Club had a really good price on a bag of lemons. All I could see, and taste, when I looked at that bag of lemons was Homemade Lemon Curd. The last time I made it, all my daughter could say was: "I could just eat this with a spoon."
