Java 7 Update 5 (and the corresponding Java 6 Update 33) are available to download from Oracle's Java download page. Looking at the release notes this is a bug fix release including 14 security fixes - see the Oracle Java SE Critical Patch Update Advisory for details.
This release also contains the JavaFX 2.1.1 SDK for Windows and Mac OS X (the developer preview for Linux can be found in the JavaFX section). The JavaFX SDK release notes just point to the security fixes.
Apple have released Java for OS X Lion 2012-004 (along with the corresponding Java for Mac OS X 10.6 Update 9).
This update includes security fixes to align it with Oracle’s Java SE 6 Update 33.
The update will come through the software updater or can be downloaded from the Apple downloads page.
