RED EYE GRAVY RECIPE
My red eye gravy recipe is part of a southern breakfast served with fried ham. Other names for this sauce include poor man's gravy, bird-eye gravy, bottom sop and red ham gravy.
The gravy is made from the drippings of pan-fried country ham that have been mixed with black coffee. This gravy is often served over ham, cornbread, grits, or biscuits. It's a breeze to make, and tastes so good.
8 slices raw country ham
3/4 cup black coffee
1 tsp sugar
1 tsp canola oil
Heat a few drops of canola oil on medium-high large heavy skillet. Fry ham slices on each side for 8-10 minutes. Pour coffee into skillet with ham. Sprinkle with sugar and stir. Cover and let simmer over low heat for 10 minutes.
