Lemon Poppy Seed Muffins

Winter is slowly creeping in and to be perfectly honest I am not ready yet for complete winter. We have really crispy mornings, and nice warm weather during the day...I would love if it stays like this!:)
After whole week having kids at home on a fall break..I need a break from their break lol!
These muffins are not overwhelmed with lemon flavor, but you can smell and taste the refreshing aroma of the lemons. In the original recipe there it was about 4 tsp. of poppy seeds and I only used three and thought it was really enough...They are moist and wonderful especially with nice cup of milk or tea!


Makes 12
Ingredients:
Adapted from Food Network

2 cups all-purpose flour
2 tsp. baking powder
1/4 tsp.(1ml) salt
1/2 cup unsalted butter, room temp.
1 tsp. finely grated lemon zest
2/3 cup granulated sugar, 
2 large eggs, 
3 tsp.(14g) poppy seeds
1/2 cup milk(more if needed)




Directions:
  1. Preheat the oven to 375 degrees F(190C)
  2. Lightly brush a muffin tin with butter and set aside. 
  3. Sift the flour, baking powder, and salt into a medium bowl and set aside. 
  4. With an electric hand-held mixer in a large bowl, cream the butter, zest, and 2/3 cup sugar until light and fluffy for a few minutes. 
  5. Add the eggs, and beat it well.
  6. Mix in the poppy seeds.
  7. Pour in the muffin tins and bake until golden brown, about 20-25 minutes. 

Cool muffins and Serve!!!!

This reminds me of orange poppyseeds muffins I baked sometime back....you lemon version looks so moist and yummy! Would love to try it soon!:)

Eh? Fall break? There's such thing exists? My kids school don't have that here... maybe your kids' school started earlier than us, that's why? Lemon and poppy seeds muffins are my favorite! Your muffins look so delicious. I can eat these mini versions a lot! Probably won't be able to stop popping into mouth. =P

I never had a fall break! I'm jealous... I know what you mean though about the weather. Fall weather is the best... as much as I love the holiday season I wish fall could last just a bit longer!

I have not had poppy seeds in so long either but I love these muffins... I'll have to try these out and fix the fact that I have not had them in so long!

This is one of my favorite muffins. I am not ready for winter (not at all!) but I do welcome autumn comfort cooking and muffins in the morning are the best way to start a day! Especially if they're your delicious ones.

I figured I'd try to comment again! I don't know why they haven't been working but my pic never shows up. Okay, I love lemon anything. Lemon zest on a salad, on veggies in a muffin...yes! Funny how I haven't baked muffins in so long. I would probably just mess around with the type of flours here, like half wheat or spelt flour for fun.

Oh they look so light and crumbly. Perfect tea time snack. If you have some lemon curd, spread some with that and serve it with Earl Grey or English Breakfast Tea. Yummmm.. hehe.. Hi! mine didn't turn out (super heavy) because I followed the metric directions for the flour, 2 cups flour (454g). However, 1 cup flour = 130g so that's 260g flour for this recipe. So only put in 260g, not 454g!!! they tasted good anyway.

I like your blog Sandra, I just recently discovered it! In response to the metric problem, dry cup conversions to metric are tricky, 1 cup flour weighs 130g and 1 cup sugar weighs 200g. When I moved to France I had to convert everything because it was easier to use only one system.

I wrote to them to let them know the dry cups to metric is erroneous, hopefully they'll be able to correct this.

Hi, it's me again, I got a reply from the website that carries the conversion chart. We need to scroll further down on the page, it has the Conversions For Ingredients Commonly Used In Baking. This is very different from the dry weight amounts in the first chart.

Hey Debbie, but still it is not 128g=1c where you were right would make it about 256g for 2 cups!:)) I need a scale, really :)) I totally forgot metric since I came to US
