Not Your Chinese Take-Out Egg Drop Soup!

Until just recently, I hadnt had egg drop soup in a long, long time. Thats because the stuff they sell at Chinese restaurants is always polluted with corn starch. And who knows what else. And I didnt think it was possible to find egg-drop soup anywhere else than a Chinese restaurant.

Here at the Beef and Whiskey Institute, we are always on the lookout for something that is 1) high in fat, 2) low in carbs, and most importantly, 3) easy as hell to cook. Ive recently discovered a new dish that satisfies all three (as well as my belly): let me introduce you to egg drop soup, beef and whiskey style!

Egg Drop Soup: Raw Materials

Heres all you need:

  • Some eggs, of course
  • Chicken stock.
    Mine came from saving the juices from cooking loads of chicken in the sous-vide supreme. This aint low fat at all, nosirreee bob! This stuff is full fat, and even comes with chunks of meat in it. Its so full of fat its turns gelatenous in the fridge.
    Unless youre desperate, I wouldnt advise using the chicken stock sold in the grocery stores, for some reason its is always no- or very low-fat. Phooey to that!
  • Seasoning (salt and pepper will do. I used something called Spike.)
  • Slices of bacon
  • Whatever plant matter you may have around: I added some left over peas I found in the fridge.

Egg Drop Soup: Ready to Slurp

Its crazy easy to make:

  1. Season the chicken stock and add some chopped up bacon.
  2. Fire up the stove and boil the stock for awhile.
    Im not really sure how long you need to boil it, but I let it go for several minutes, just to make sure nothing nasty survives in there.
  3. At some point, add the peas (or whatever you feel like adding, if anything).
  4. Meanwhile, stir up your eggs.
  5. When youre ready, turn off the stove and slowly pour the eggs into the stock.
  6. Thats it!

  1. Glad to see you are still posting an entry on occasion. The egg drop soup sounds great! I am actually not as fond of eggs as you seem to be this seems like a good way to eat them. I dont check with most of the low carb / paleo blogs these days is the food reward theory still the argument du jour? You seemed to have succes with it when you tried it did you try it again?

    I dont really follow this stuff but there does seem to be a contingent of folks who reject the insulin theory and embrace food reward. I tried the food reward thing out of sheer curiosity, and thought it worked great, till 1) I realized most of what I lost was water weight, from the lack of salt. I had no idea you could lose even more water weight after being on low carb for so long; and 2) I got sick of eating boring food. I may do a post on this soon, but the bottom line for me seems to be that, yeah, the boring food thing might work, but who cares? Who wants to eat like that? I certainly dont. Also I had issues with cramping, due to the lack of salt.
