Ever considered Distributed Proofreaders at http://www.pgdp.net? Over half of what's in Project Gutenberg comes from them, and they have a very good setup for contributing just as much work as you want.
I've looked into distributed proofreading. I think I'd find it easier to stay motivated doing other things around opensource / public-domain ebooks., which I can play to my previous experience.
I thought about signing up as a gutenberg volunteer, but the sheer scale of the project scared me away.

For example working on calibre. http://en.wikipedia.org/wiki/Calibre_(software)
If you do a little every day, it's not such a big project. My feeling is if you do too much over a short period of time you lose interest.
