Easter Chick Mini-Cakes

Easter is arriving in just under 2 weeks and we’re busy crafting and creating all kinds of fun Easter things in my household. The kids are I made these adorable (and yummy) chickie mini-cakes this weekend from Life Made Delicious. They were so fun to make and would be a great Easter treat for kids.

What You’ll Need

Ingredients:

1 box of Betty Crocker Super-Moist white cake mix (plus ingredients to make)
1 can of Betty Crocker Whipped Fluffy white frosting
yellow food colouring
mini chocolate chips
yellow melting wafers
orange taffy
orange jelly candy

How To Make It

1. Prepare cake mix according to box directions. Pour into cupcake liners and bake according to box instructions. Remove from oven and cool completely.

2. Remove cupcake liner from cupcake and place cupcake upside down on a plate. Stir some yellow food colouring into your white frosting until evenly mixed and frost your upside-down cupcake with yellow frosting.

3. Cut a diamond shape out of your piece of orange taffy and fold it into a beak shape. Place the beak on the cupcake. Place 2 mini chocolate chips on the cupcake for eyes.

4. Take 2 yellow melting wafers and place them in the side of the cupcake for wings.

5. Place an orange jelly candy on top of the cupcake for the chick’s head feathers.

6. Finally, using your knife, slice 2 feet out of the orange taffy and place on your cupcake.

Lucky Charms Cupcakes

These Lucky Charms cupcakes are magically delicious! I was looking for a fun St. Patrick’s day treat for the kids, and these Lucky Charm cupcakes from Life Made Delicious were perfect! They’re yummy, easy to make, fun and colourful. Just what the kids like! If you’re looking for a yummy St. Patrick’s day treat, look no further. Whip up a batch of these babies and enjoy! Here’s the recipe:

What You’ll Need:

1 box Betty Crocker Supermoist Rainbow Bit cake mix
Water (or milk), vegetable oil and eggs called for on cake mix box
1 container Betty Crocker whipped vanilla frosting
3 cups Lucky Charms cereal – I just used the marshmallows
Rainbow sprinkles

How To Make It:

STEP 1

Heat oven to 350°F (325°F for dark or nonstick pans). Place paper baking cup in each of 24 regular-size muffin cups. Make and bake cake mix as directed on box for 24 cupcakes, using water, oil and eggs. Cool in pans 10 minutes; remove from pans to cooling racks. Cool completely, about 30 minutes.

STEP 2

Frost cupcakes with frosting. Top each cupcake with 2 tablespoons cereal; sprinkle with sprinkles.

a cupcake full of love

I saw this awesome idea on pinterest, and I just couldn’t resist trying it out. A pink heart baked inside of a cupcake – can you get any sweeter than that?? These were surprisingly easy to make and they are just so darn cute. Of course, liking convenience, I used a boxed cake mix and canned frosting. I’m sure making your own from scratch is just lovely and tastes delicious, but I’m more about saving time than being gourmet. And I’m okay with that! This is how I made them:

What you’ll need:

1 box white cake mix (+ ingredients to make) – or make your own!
1 can white frosting – or make your own!
red gel food colouring
Valentine’s sprinkles
small heart cookie cutter

Directions:

1. Preheat your oven according to box directions.

2. In a mixing bowl, mix together cake mix according to box directions.

3. Take about 1 1/2 cups of the prepared cake mix and place in a separate bowl.

4. Add a little red gel food colouring to the 1 1/2 cups of batter until desired colour is achieved.

5. Pour this pink batter into an 8-inch square or circle pan and bake for 20 minutes, or until done. Remove from oven and cool completely – you can put in the fridge to speed up this process if desired.

6. Using your small heart cookie cutter, cut hearts out of the pink cake. Set aside.

7. Using a pen, place a small dot on the outside of your cupcake liners and place these liners in a muffin tin with the dot facing forward.

8. Pour about 1/2 inch of white cake mix batter into cupcake liners. Place the pink cake cut-outs in the 1/2 inch of batter, making sure they are facing forward, towards the dot.

9. Finish pouring the batter into the cupcake liners so that it covers the pink hearts.

10. Bake according to box directions. Remove from oven and cool completely.

11. Once cooled, frost the cupcakes and decorate with cute sprinkles.

12. You will know which direction to slice the cupcake to see the heart in the middle based on where the dot is on the liner.

cute cupcake: octopus

Here’s another cupcake in my cute summer cupcake series. This octopus was really fun to make, not to mention easy too. I frosted a prepared cupcake with blue frosting (white frosting mixed with a little blue gel icing colour). The octopus is made out of a red jordan almond and some red taffy. I cut and molded the taffy into 8 legs. Then I took a toothpick and some gel icing colour and dotted some tentacles on the legs of the octopus. I also used the toothpick and gel icing colour to draw a face on the octopus, along with white frosting for the eyes. Super simple and super adorable.

cute cupcake: dragonfly

Here is another fun and easy summer cupcake. I used a few easy to find candies and made this adorable dragonfly cupcake. And while we’re on the subject of dragonflies – is it just me or are they getting bigger?? I saw one outside the other day and it was so big it scared me, lol. Either I just don’t remember how big they really are, or they are becoming mutant creatures around here! Anyway back to the cupcake – I frosted a prepared cupcake and made the dragonfly using a chocolate finger cookie and 4 jordan almonds. I used black licorice lace for the antennae and dotted on some black gel icing with a toothpick for the eyes. Easy peasy.
