These Mini Pizza Sandwiches are easy and quick. Perfect for tailgate parties, as well as a light lunch or quick snack.
Hello there It’s a Keeper readers. I’m Kim, and I’m here today to tempt your tummy while Christina is busy doing her “thang”.
I have two blogs, yes I realize that’s a bit crazy but I like that it keeps me on my toes. I like being busy, and I love to cook so it seemed like a natural progression for me. One site is called Cravings of a Lunatic, and it’s recipes from A to Z. Basically my motto is I crave it, I make it, I eat it. I love easy recipes and simple desserts, and I have a serious attachment to parfaits.
My other site is a grilling blog called Kiss My Smoke. It’s all grilling, all the time. I have been manning the grill for over 20 years. I love showing people you can cook anything on the grill. It’s essentially an outdoor oven.
I love tailgate food so I was happy to oblige when Christina mentioned she needed guest posts. I ran through recipe ideas, from chicken wings to sliders, but I kept coming back to the idea of pizza. We’re total pizza fanatics in our household. We eat it far too often. Which if you really think about it can you ever eat too much pizza? I don’t think so.
I wanted to make this particular recipe because it’s one you can do on the grill, but for those who don’t have an outdoor grill this can also be cooked in the oven. So it’s win-win. I’d personally suggest grilling them, it’s always my favourite way to cook almost anything. But it’s nice to have options.
What I really dig about these Mini Pizza Sandwiches is you can make them ahead of time, then just warm them up when the football game kicks off. Another cool thing about them is they taste really good even as they start to cool down. While I prefer mine piping hot off the grill some days things happen that make getting the food on the table a bit slow. Like being a food blogger. You pop these bad boys off the grill and realize that by the time you photograph them the cheese is not piping hot any more. Then you eat one anyway and realize it really doesn’t matter. They still taste amazing even after they have cooled a bit.
Another great thing about these is they are portable. You can whip them up, cover the dish with tinfoil and bring it with you any where you happen to be celebrating football season. That’s pretty nifty if you ask me.

Mini Pizza Sandwiches
- 1 in package of mini burger buns (12 a pack look for mini or slider buns)
- 1/2 cup pizza sauce
- 2 g x 250 package of Pizza Variety Mix Deli Meats (they come in a package and are mini size and include pepperoni salami and smoked ham)
- 7 oz /198 g package of slim cut mozzarella slices low moisture 2%
Preheat grill to medium heat. I start mine before I begin to assemble the sandwiches.
In a casserole pan, or rimmed cookie sheet, line up all the bottom pieces of the buns.
Spread a scoop of pizza sauce over each one and smooth out.
Add a layer of pepperoni on each bun. Then ham. Then salami. Top with a slice of cheese.
Repeat with a second layer of pepperoni, ham, salami and cheese.
Place the casserole dish directly on the grill grate. Close the lid and allow the sandwiches to cook for about 6 to 8 minutes, just enough to allow the cheese to melt. Depending on your grill you can add or subtract 1 to 2 minutes.
Remove carefully, and turn off the grill.
Place top bun on each sandwich. Use any kind of toothpick or cocktail pick to hold them together. This is more for appearance.
Place on a platter.
Serve with a big old tailgate loving smile!
Recipe NotesIf you want to adapt these for the oven use all the same steps but preheat indoor oven instead of grill. I recommend cooking them at 400 degrees F for 8 to 10 minutes in the oven.
You can jazz these up with peppers, mushrooms, onions or anything else your little old heart desires. Have fun with it. Let the kids get involved and make their own.
Remember you can add extra oomph to these by adding veggies or whatever you like on pizza. Pile them as high as you like. The sky is the limit.
