Webb-Jackson was caught after the stable owners installed CCTV cameras when they suspected a break in a month previously.
He was found by police crouched in the corner of the fourth stable and was arrested after a brief fight with officers, the Daily Examiner reported.
Webb-Jackson pleaded not guilty to committing an act of cruelty but Magistrate Karen Stafford convicted him on Tuesday.
He was jailed for 10 months and fined $700. The female horse was said to be 'traumatised' after the assault.
It comes after the World Health Organization recognized 'compulsive sexual behaviour' as a mental disorder.
The contentious term 'sex addiction' has been around for decades but experts disagree over whether the condition exists.
In the latest update of its catalogue of diseases and injuries around the world on Saturday, the WHO takes a step towards legitimizing the concept, by acknowledging 'compulsive sexual behaviour disorder,' or CSBD, as a mental illness.
