Whats next for Callum?

I have now finished my Scholarship with George Calombaris and his restaurants. I couldn’t be more grateful for my time and the many valuable experiences I had. Working in kitchens for over three months confirmed for me that food is something I want to pursue as a career. The question lots of people ask me now is what’s next for Callum? Since leaving The Press Club group recently I have been doing a few catering gigs, cooking demos and charity work. What I’m really about though is education about food.

I have a fantastic opportunity during March and April to visit a group of university colleges, where I will spend time with the students that live on campus. I hope to teach them some basics in how to cook easy, healthy meals (on a uni student budget). I’m looking forward to the challenge- and as a former uni student myself, I have a few tips and tricks that I think will benefit the students. It gets my goat when people think cooking is too hard, time consuming or expensive. Seeing some of my own friends live largely on take away and pre-prepared meals, I want to try and help as many people as I can to understand what fresh cooking is all about.

One of my main inspirations, Jamie Oliver, is currently airing his show ’30 minute meals’ which I think is fantastic, as it shows people how quick it can be to make not just a dish, but an entire meal. If you aren’t familiar, check it out here:

After my stint with the university colleges finishes, my goal is to get involved with the education system, and what children are learning about food. I think schools are really improving what they are teaching children, with fantastic programs already existing such as Stephanie Alexanders Kitchen Garden Foundation. Check it out here:

Wanting to help educate people does not necessarily mean that I’m turning my back on being a chef as a career. I feel though at this place and time I have some fantastic exposure from the Masterchef show which I can use to try and give something back.

I’ll make sure I put some photos up once I start at the colleges, and some recipes to match. In the meantime I’ll be continuing to support fantastic charities like the cancer council, and do some demonstrations for example, the Natuzzi food and wine festival with my good mate Adam Liaw.

Long Time No See

It has been some time since I have blogged; restaurants around this time of year can be pretty crazy! I have spent the last two weeks at a new restaurant in Melbourne, Philippe Mouchel’s PM24. Philippe has held a reputation for having some of the best classic French food in Melbourne. French food is one of my favourite cuisines, and so I was pretty eager to get started.

One of the first things I noticed about the way Philippe (and head chef Sascha) ran a kitchen was how willing they were to give everyone in the kitchen a fair share of responsibility. For example, making terrines is something that a Sous Chef or other experienced chef would make. Here some of the younger chefs were given the task.

Another example was letting me work on the sauce section on my second week of working in the restaurant. Sauce section involves making stocks, sauces, cooking meat, and plating up main dishes, and is usually done by the more experienced chefs.

I hadn’t made a terrine like the one above, and so I eagerly asked if I could do the first job required; clean the chicken livers. I think the chef thought I was a little insane, as there was 15kg of livers to be cleaned! I must admit my enthusiasm for the task waned as I battled my way through the enormous pile of livers. At least I’ll be pretty quick if I ever need to make chicken liver parfait or a terrine again!

The centrepiece of the restaurant is certainly the rotisserie. Chicken, duck, pork and rack of lamb are all on the menu.

I doubt PM24 will ever receive a complaint in regards to portion sizes. The pork shown above is about the size of my head, and anyone who orders the chicken gets half a chicken with rotisserie vegetables. It’s any wonder people get to dessert, but it would be pretty hard to resist when you see other tables getting desserts like this.

The desserts are traditional French. Classic French desserts are commonplace among many restaurants, and to stand out it means doing the little things right. Take for example the creme brulee. PM24 serves it in a shallow dish with a big surface area (which means more caramel on top) and the pastry chef sprays the top with alcohol, which allows the front of house member to set the dessert on fire at the table. I would order a flaming dessert every time!

One of the quintessential parts of any French kitchen is the stocks and sauces. To allow for big volumes of sauce to be made, a brat pan is used. It works basically like a massive square saucepan, and is stirred with a metal implement which I’m sure was once used as an oar in a canoe.

Lessons learned at PM24:

  • When tightening a wingnut, righty=tighty, lefty=loosey. This might seem silly, but I wish I’d known it before I broke the wingnut on the thermoregulator. It took me a buttload of phone calls to track someone down who sold replacement parts in Melbourne.
  • Sauce section is fun, difficult, and bloody hot when you are standing in front of a rotisserie/ovens/stove for a long time.
  • PM24 has shown me a different way of looking a rotisserie. Not a device often used in top restaurants, but is used expertly to create really beautiful food.
  • Making 900 suckling pig croquettes is a cruel thing to do, as they are one of the tastiest morsels of food I can imagine. I’m still kicking myself I didn’t steal a hundred or two and sell them on the black market. They would have been snapped up like hotcakes. Or hot croquettes.

Brown butter ice cream

Just a quick post guys- just wanted to share this brown butter ice-cream I just made.  It is possibly my new favourite ice cream.

 

This recipe is based on one of my favourite books- frozen desserts by Francisco J Migoya

 

100g good quality butter (this ice-cream is all about the butter- use the best butter you can afford)

4 egg yolks

150g castor sugar

720ml milk

 

First, make the brown butter. In a small saucepan melt butter, then continue to cook until brown but not black. The butter should smell like roasted hazelnuts when at the correct beurre noisette stage.

 

Whisk the egg yolks and castor sugar together in a large heat proof  bowl.

 

Bring milk to a simmer in a medium saucepan. Pour onto egg yolks, whisk until combined then transfer back to saucepan. Cook mixture until it reaches 82C on a thermometer, or until it thickens and coats the back of a spoon.

 

Strain mixture through a fine mesh sieve, and cook rapidly over ice. Stir in butter while milk and egg mixture (custard) is still warm.

 

Churn in an ice-cream machine. If you don’t have an ice-cream machine you can freeze the mixture, periodically removing and beating with electric beaters, but if you love ice-cream like I do, a machine is money well spent.

Diary of time in Melbourne- entry no. 10

Coming into the festive season I thought it would be great if those of you reading this shared some favourite recipes/ food stories for this time of year. Unsurprsingly I love Christmas! Not only is it a a great chance to rally all your loved ones together, but there’s always a license to eat as much as you want.

I remember as a child not being able to eat the Christmas pudding one year, as it was so soaked in brandy because it wouldn’t light! Last year, I decided to cook a whole snapper for the family. Upon getting the snapper delivered though, I realized that I had gotten a little carried away with the weight I requested. It was far too big for my oven, and so it had to be filleted before I could cook it! My family is also always keen for a game of backyard cricket or boule, with a glass of punch or beer never too far away.

Everyone has their different traditions at this time of the year. Something my family has done for as long as I can remember is having pancakes on Christmas morning, before the inevitable feast that was to follow for lunch. I love pancakes, they’re easy, you can make the batter in advance, and most importantly it gives you an excuse to have ice cream with your breakfast!

My recipe results in fluffy, thick pancakes (well, hotcakes more so) as I prefer these to the thinner crepe version.

1 ¾ cup self raising flour

1 1/4 cup milk

2 eggs

4 Tablespoons castor sugar

To serve:

Lemon juice and sugar, banana, maple syrup and icecream, strawberries and cream are some the combinations I am partial to.

Make a well with the flour in a large bowl. Whisk together milk, eggs and sugar, and pour into the well. Using a whisk, incorporate the dry and wet ingredients to a smooth batter. Cover with clingfilm and transfer to the fridge until ready to cook. I often do this Christmas eve so I can just wake up and cook them in the morning. Even if you make them in the morning it is a good idea to rest the batter for half an hour in the fridge before cooking to relax the gluten in the flour.

I have a great non-stick pan at home, and so my little trick is to actually cook the pancakes in a dry pan, that is, no butter or oil whatsoever. I find this gives the a really even colour, but if you don’t have a good non stick pan I would cook them in a little butter.

Another favourite amongst my family has always been having a pavlova on Christmas day. I am a fan of Donna Hay’s recipe, as I find it gives a really pleasing result and gives that nice combination of crisp outer shell with a softer and more marshamallowy interior. Is marshmallowy a word? Probably not. A pavlova is very much a blank canvas and you can cover it in whatever you want. I can’t say I’m a fan of chocolate on a pav, as they are sweet enough. For me fruit is the way to go, and acidic fruit at that. I think a really simple vanilla Chantilly cream with halved pitted cherries is delicious, and screams of Christmas. You don’t see cherries around much during the year (well, not good cherries) and so my family would not eat them. Come December though, we would go crazy and buy them in bulk and snack on them constantly.

My Aunty, who makes the best pav in the world (no bias) uses kiwi fruit to cover hers, but I think New Zealand already have a fairly solid claim on its invention, so I think using kiwi fruit is admitting defeat! Passionfruit and berries also work well.

Pavlova:            (thanks Donna)

4 egg whites

1 cup castor sugar

3 teaspoons cornflour

1 teaspoon white vinegar

Preheat oven to 150 degrees Celsius. Place egg whites in the bowl of an electric mixer and beat until soft peaks form. Gradually add sugar, beating well until the mixture is glossy. Sift the cornflour over the egg white mix and fold through with the vinegar.

Pile the meringue mixture into an 18cm round on a baking tray lined with non-stick baking paper. Place in the oven, reduce temperature to 120 degrees Celsius and cook for one hour. Turn the oven off and allow the meringue to cool in the oven. To serve, top with whipped cream and fruit and serve immediately.

Other than continuing work at Maha this week, I also spent a morning with George as he worked on an upcoming book. It was lots of fun, and best of all I got to eat the leftover food. We shot 5 dishes that morning, and so I had everything from a rabbit and mushroom braise to a fruit parfait for breakfast. A good way to start the day.

It was interesting to see the array of props the food stylist had.

Lessons learned this week:

  • Writing a cookbook would be a really fun process, and plus you get to eat all the fantastic food afterwards! The only downside, is that like Masterchef, the food is cold by the time you get to enjoy it!
  • Something I learnt about myself (but have always known somewhat) is that I love teaching people to cook. Even little things like giving the kitchen hand at work my knife and showing him how to correctly chiffonade the herbs was really satisfying (he hopes to be a chef one day). I just need to find a way to channel this passion into something positive!
  • Everything tastes better when you are wearing a ridiculous paper hat from a bon-bon. Or maybe the food at Christmas time is just awesome.

Diary of time in Melbourne- entry no. 9

My culinary adventure continued this week, venturing a little further down Flinders Street in Melbourne,  down a side street to Shane Delia’s middle-eastern restaurant, Maha. I thought I’d start by running through some of my favourite dishes on the menu.

Roast quail, cocoa nibs, candied walnuts and quinoa, chicken parfait bastilla, coffee and cardamon air.

I like the combination of the cocoa and coffee with the quail, which is not something I would have thought of. The soft chicken parfait contrasted by the crunch of its brik pastry shell is heavenly. I love a well-made chicken liver parfait, and this one is particularly delicious. I endeavour to steal the parfait recipe before I leave!

Oyster katifi, puffed and bbq corn salad, smoked and salted almonds, tomato and sumac foam.

I don’t want to like this dish, as I fundamentally disagree with the cooking of oysters, but the contrast of texture between oyster and pastry makes it pretty hard to resist! Sumac is a spice I hadn’t used much up until recently but now I love it. Compliments the tomato nicely in this dish, but is used at The Press Club to flavour strawberries in one of the desserts.

Turkish delight donuts, candied almonds, almond ice cream

Anyone who has eaten at Maha will almost certainly have had these donuts. I was silly enough to eat one almost straight out of the deep fryer, and burnt the crap out of my tongue on the molten turkish delight contained within. In fact, they are so popular that the other desserts on the menu rarely get ordered. It’s actually a bit of a shame, as there are some cracking desserts on the menu, my favourite being the sweet corn cream with salted caramel and nut butter ice-cream. It was ordered too scarcely for me to get a photo of it!

It would also be criminal of me to not put up the photos of Quay I took when I went on the weekend. It was my first visit to the 3-hatted, 27th best restaurant in the world (according to S.Pellegrino’s top 50 restaurant awards) The restaurant also won the Australian Gourmet Traveller Restaurant Awards 2010 and The Sydney Morning Herald Good Food Guide 2010. After recently acquiring Peter Gilmore’s Quay cookbook, I was excited to say the least.

Simply put, the food was inspiring. Quay is the pinnacle of fine dining in Australia, and along with the views of the harbour bridge and opera house, it made for a very memorable experience. I have met chef Peter Gilmore a few times, and it’s very pleasing to know that he is a very down-to-earth, friendly guy. I think sometimes people assume that top chefs have big egos or are arrogant, and this couldn’t be further from the truth here. Adam and I had to re-create Peter’s ‘snow egg’ dessert in the finale of Masterchef, and so I think Quay will always be pretty special to me as it was involved in a big part of my life. My photos do not do the food justice, as the dim lighting means that the dishes all look rather dark and brown. I hope you will get the gist though. Enough talk, I’ll let the food speak for itself!

I could write about Quay for hours, but I think it may be best if I don’t add too much text to this already rather lengthy post.

Lessons learned this week:

  • It’s fun to experiment with flavour combinations that you wouldn’t always think are going to work. As shown in my Maha photos, I think the coffee and quail goes well, and as mentioned sumac and strawberries is delicious.
  • If you are going to treat yourself to a meal at a top restaurant, I think it’s worth doing it properly and getting the degustation, so you can sample the best of what the kitchen has to offer. It is usually the more expensive way to dine, but I would rather spend more money and go out less often. The same applies with food you buy too- I would rather buy 100g of a beautiful artisan triple cream brie than 500g of supermarket brie for the same money. Chocolate is another example, if I had $10 to spend I would get the best quality stuff and have a little bit rather than a kilogram of poor quality chocolate.
  • Don’t burn your tongue on piping hot donuts. Not only does it hurt, it also makes tasting dishes for seasoning slightly more of a challenge!


Diary of time in Melbourne- entry no. 8

This week I spent a service at the all-dessert café Rosamond, run by pastry chef Pierre Roelofs. I went in with big expectations, not only because I had tackled the dessert degustation twice previously, but Pierre has a resume to die for. He spent fourteen years honing his craft in Europe, spending time at three Michelin-starred restaurants, including Heston Blumenthal’s The Fat Duck.

Needless to say I wasn’t disappointed. I arrived, knowing that although I had eaten there recently, I would not have seen any of the dishes I would be making tonight, as the menu is brand new every week. Pierre has been at Rosamond for 33 weeks now, which means 33 entirely different menus, with four desserts each. There are four desserts on each menu, so 132 different desserts in less than a year, all of high quality, with no signs of slowing down. When you see how complex each dessert is, you may begin to understand why Pierre is one of the best pastry chefs going around.

The first dish I was shown to plate up was one of the restaurant’s signatures, the test tube (containing a different combination each week). It’s a little amuse bouche, and is a fun way to start the evening.

Pear puree, tea jelly, pop rocks and vanilla gel (I forgot to take a photo so the picture is from a couple weeks ago when I ate there and is in fact chocolate).

The second of the four desserts tonight was a good combination of classic techniques (blueberry frangipan) and modern ones (blueberry gel). Pierre mentioned that many good pastry chefs turn their noses up at some classic techniques (crème pat) and whip out the molecular gastronomy kit at every chance. Food is all about taste though, and Pierre is not above any technique in order to create the perfect flavour balance.

The third course is on the menu as “the one in the middle” and is served in a glass. Actually, that is a bit of a lie as there is no menu as such. Even if there was, I’m not sure what you would call these dishes as they have quite a few elements! This makes it quite interesting to eat, as you continue to find new elements to the dish as you delve deeper into the glass. I think this dish is an excellent example of how important it is to not only balance flavours, but textures too.

The fourth and final dish of the night was a stunning little dome, and had some rather unusual, but delicious elements. It’s not that often you see polenta used in a dessert, and I’d certainly never heard of freeze-dried maple syrup before!

If you read the descriptions of each dish, you may notice words like ‘gel’ and ‘jelly’ pop up a few times. Below are some of Pierre’s golden rules for using gelling agents:

  • Agar for gels: 0.9 grams per 100g liquid (eg. Fruit puree) is the general rule, but sometimes a bit less if the liquid is particularly viscous. Agar needs a certain amount of liquid to work properly. If you make something with agar and it is grainy, it may be because there was not enough moisture for the agar. It is really strong in thin layers, but can become brittle if you set it thick. The liquid you wish to gel and the agar should start from cold and come up to a rolling boil as quickly as possible, whisking. As soon as it is at a rolling boil, remove from heat and cool as quickly as possible. Allow to cool completely and set, then puree in a blender to a gel.
  • Xantham gum for gels: Used when combining a fat with a non-fat liquid (eg cream and fruit juice) to stop the gel splitting when blended
  • Gellan: Used to obtain gels for thin liquid eg. Juice
  • Gelatin: 1 leaf per 100g liquid for a firmly set jelly

Pierre was kind enough to give me one of his take-home desserts. The dry mix in a packet is brought to the boil with a little milk, and turns to a finished pudding in minutes! Very clever indeed. There is gellan gum in the mixture which allows it to thicken to a pudding consistency so quickly.

Some lessons learned (from Pierre) this week:

  • You should be able to justify and validate everything you do. Why is that element on the plate? How is that element made? Don’t use an ingredient without knowing where it comes from and how it is made. Pierre’s example was the pop rocks that we were plating up. I had no idea how pop rocks are made. For the record, little pellets of really hot sugar are fired in a high-pressure environment, and then are cooled very quickly. The high-pressure means that they pop rocks trap little pockets of CO2 as they solidify. When you eat them, (or if they come in contact with liquid) they sugar melts, releasing the pockets of CO2, hence the ‘pop’.
  • Work as neat and tidy as you possibly can and you’ll be the best chef you can be. I have been told this by many respected chefs, so I figure there is something in this.

Diary of my time in Melbourne- entry no. 7

When I asked on my Twitter account what I should do on my day off, I had quite a few people tell me to go on a chocolate tour of Melbourne (www.chocoholictours.com.au).

We were taken to four different chocolate shops, given a little spiel about how the chocolate was made, and of course got to eat plenty of chocolate! It was a rather enjoyable afternoon. I love all chocolate, but I am particularly fond of dark chocolate. Previously I had eaten chocolate which contained 85% cocoa solids (the higher the percentage, the more bitter and less sweet the chocolate is). I found some chocolate though which was 100% cocoa solids, and I had to try it, knowing that it probably wouldn’t taste great because it has no sugar in it!

Tasting the chocolate it was more savoury than sweet; but it was good to try and it gave me quite a few ideas about dishes I could make with it. Maybe soon I’ll pick up some venison and finish off a sauce with the chocolate, or perhaps make the Mexican sauce Mole. Some people say you shouldn’t put chocolate in Mole, some say you should. I’m no Mexican expert so I’ll just sit on the fence for this one!

One of the places that we went to to try the chocolate was Cacao, who not only have some delicious chocolate but recently won the Melbourne Macaron competition, with their tomato, basil and strawberry flavoured macarons. I’m sure some of you may know that I love a good macaron, and I couldn’t resist trying some of their flavours. The cassis was a personal favourite, although I was a little disappointed not to be able to try a tomato, basil and strawberry!

On Friday at The Press Club we did an exclusive function, which means the restaurant was booked out by a large group, all of which were eating degustation. This means that we had to get 800 plates of food plated in the night (100 people x 8 courses), it’s not hard to imagine the difficulty of co-ordinating the courses to go out at the same time! The service essentially ran like a production line, with each person being responsible for adding one element to the plate. It was quite interesting to see how it ran and it’s easy to see how without proper organisation the whole night could have gone pear-shaped very quickly!

We have a rather delicious zucchini flower and gnocchi dish on the menu at the moment. The photo below is the dish in its original guise, but has since changed and no longer has a stuffed zucchini flower. The flower is now separated, battered and deep fried. The flower stem is then chopped and added to the regular zucchini. It is also served with a black olive puree.

This is my version of the dish to cook at home (I don’t include golden beetroots as they are very difficult to find if you’re not ordering them straight from a supplier).

Ingredients: (serves 4)

1 quantity gnocchi, blanched

4 zucchini flowers

1 zucchini, diced

1/4 bunch chervil, shredded

handful broad beans, blanched

2 teaspoons white wine vinegar

olive oil

1/4 cup vegetable stock

2 Tablespooons butter

goats curd and freshly grated peccorino, to serve

Method:

Separate zucchini flower from stem. Slice stem and tear each flower into three pieces.

Heat a non stick frying pan with a little olive oil. Add the gnocchi and fry on a high heat, turning once, until golden brown on both sides. The gnocchi is blanched, so you aren’t trying to cook the gnocchi too much, just warm it and give it nice colour. Remove gnocchi from pan and reserve. Wipe out pan, and add some olive oil. Add diced zucchini and stem to the pan, and cook until golden, turning on a high heat. Add the broad beans, then add the vinegar and stock. The pan should be quite hot so the stock reduces really quickly, to help steam the vegetables rather than stew them. Once stock has reduced to almost nothing, add flowers, chervil, gnocchi, and butter. Toss to coat everything with butter. Season with salt, then distribute between bowls. Serve with some goats curd spooned over and peccorino.

As cancer is something that has affected me personally, I’m supporting Australia’s Biggest Morning Tea (cancer council), which is held on thursday 26th of May next year. Lessons learned this week:

  • When you cook pasta, you want the water salted and on a rolling boil, however, when cooking gnocchi the water should be on a more gentle boil. Gnocchi rises to the surface of the water when cooked but if the water is boiling to rapidly it is hard to tell when to remove it from the pot.
  • Organisation is the key to big functions. Be organised, everything will run smoothly. It would be very easy to completely lose the plot without adequete preparation!
  • Practise doesn’t make perfect, it makes par. Having said that, the best way to get good at something is to do it regularly. I have noticed how much faster I have been getting at jobs that I was quite slow at initially.
  • If you ever go on a chocolate tour, you are offered a hot chocolate and a chocolate mousse at the end. After eating chocolate for hours, I would advise on getting the mousse take-away. I wish someone had given me this advice!

I am rather happy to say that unless there is a last minute change of plans I am spending a day next week at Rosamond, the dessert degustation restaurant I spoke highly of in my last blog entry. I’ll try to take lots of photos for my next post!

Diary of my time in Melbourne- entry no. 6

After a hard weeks work at The Press Club I thought I would take a break from talking about work. Instead I want to share some of my favourite dining experiences since I have moved to Melbourne. I have come to learn about food, and this means not only hands on experience but also seeing what other restaurants are doing. I have been using my days off to try and visit as many places as I can. Here are some of my favourites:

Movida:

After filming an episode of Masterchef on the cobbled alley next to Movida, I couldn’t wait to get back and try the popular Spanish tapas style cuisine. I would recommend booking as it is a very busy restaurant. The food was beautiful with honest big Spanish flavours. You can either order individual bites or larger plates to share. Shown below is a stunning duck liver parfait with a Pedro Ximenez sherry foam. I loved everything savoury I ate, and the desserts were solid, without being mind-blowing.


Huxtable:

On a particularly chilly night walking down Smith street in Fitzroy, I discovered this place as much to get out of the cold as to enjoy an amazing meal. We were encouraged to sit at the bar which was effectively a chef’s table as I sat in a perfect position to watch the chefs work. I would recommend sitting at the bar as not only was the food interesting but the chefs were more than happy to have a chat. In my case I actually got the chef to choose everything I would eat for the night; I figure if it’s the chefs favourite it’s probably good! I often take the approach of asking waitstaff or the chefs to order for me. I feel that most people like having trust placed in them and take a little bit of pleasure in doing so. Of course some people will just give you the most expensive thing on the menu, so it’s not a flawless system! The chef has travelled a lot, and this is reflected in the menu with influences from all over the world. Similarly to Movida this isn’t a restaurant where you order entree and main as there are ‘bites’ as well as shared style food. Desserts were rich but tasty, such as the chocolate mousse with raspberry I ordered.

Il Forniao:

The menu has been designed by none other than Philippa Sibley, who some of you may remember as the chef I cooked against in my celebrity chef challenge on Masterchef. In fact, the ‘snickers’ dish is requested so frequently they have been unable to take it off the menu. I ordered it for a bit of nostalgia, and it was as delicious as I remembered! You can order both classic savoury French dishes (the chicken pithiver with puff pastry made in house was particularly good) but the menu is heavily geared towards ordering dessert. Classic French, classic pastry, beautiful desserts. Unfortunately, Phillipa is no longer at Il Forniao as of 20/11/2010 and so I’m not sure what this means exactly.

Ezard:

I have been wanting to visit Teage Ezard’s restaurant ever since I got the book a year ago. I was not disappointed. The food could be described as Modern Asian with Thai, Japanese, and Chinese influences appearing heavily on the menu. I wanted to get the degustation but also wanted to try the signature dish of caremlized pork hock. The waiter was more than helpful and included it as a course on the degustation menu. It is easy to see why this dish has not left the menu since the restaurant opened, with a perfect balance of flavours and textures. I love dishes in restaurants that use secondary cuts of meat and turn them into something special. This is a perfect example. The steamed crab dumpling with the quintessential Thai soup Tom Kha poured around the bowl at the table is shown. Subtle flavours, one of my favourite dishes of the day.

Cumulus:

Cumulus is Cutler & Co’s more casual brother, and has a no booking policy. Which can be annoying to wait around for a table, but is perfect if you are a last minute person like I am. Sharing style food is the way to go here. The place has a buzzing atmosphere, with a packed restaurant, people waiting to get tables, and an open kitchen. The food is often simple, but done very well and using some fantastic ingredients. The pork and snails dish was tasty, as was the chocolate dessert served with a barley ice cream.

Rosamond:

I’m almost hesitant to include this in my list of awesome food experiences, as Rosamond was truly one of the best eating experiences of my life, and I want to keep it all to myself! Only open one night a week, Pierre Roelofs is a talented pastry chef who does a dessert only degustation. The menu changes every week, so no two visits are alike. The way Pierre combines flavours and textures, without making any of the desserts too rich or sweet is to be admired. I am going to be doing some work experience there in the future which needless to say, I am very excited about! Pictured is “rhubarb and banana”

Of course The Press Club is in my list, but I talk about the food there often I don’t feel it is necessary to include it again this week! I might just take this opportunity though to thank all the chefs who are patient in teaching me their trade. In particular, Andy, Carl, Eliza, and Smokey (I don’t know why they call him Smokey) have spent a lot of time helping me “push on” in the larder section, Nada who has shown me the pastry section, and of course head chef Joe, who is not only teaching me to cook better but is organising all the work I am doing outside The Press Club. I could go on all day naming names but there is too many, so thank you to everyone!

Lessons learned this week:

  • Hands on experience is a great way to learn, but inspiration for me comes from seeing what other people are creating with food. Checking out a diverse range of places really helps you to decide what you really love. Even with something like desserts, trying to compare classic desserts (eg snickers bar pictured above) with Rosamond style, is like apples and oranges. Both are sweet, both are technically difficult, but worlds apart.
  • Eating five desserts in one night is totally ok, and desserts don’t always have to be sickly sweet! In all the desserts I had at Rosamond, none were chocolate or too sweet!
  • Eating at the chefs table/bar/watching an open kitchen is an awesome way to dine, but be prepared to want to try one of everything on the menu!
  • It is not only important to season food with an appropriate amount of salt, but also to season at all stages of cooking (and it sounds obvious, but TASTE throughout all stages of cooking!). Don’t just whack some in at the end. When blanching vegetables in salt, use more salt than you think necessary. You’re not eating all that salt, but the salt helps to cook the vegetables faster, and hence retain colour, texture, and taste.
  • Complimenting guys on their moustaches during Movember will get you a long way. Everyone seems to be quietly (or not so quietly in some cases) proud of their ‘tache’ but a little unsure if they are pulling it off. To anyone reading this who is self conscious about their moustache this month, I assure you mine is wispier and more pathetic!

Diary of time in Melbourne- entry no. 5

Goodbye Callum. Well, at least the physically fit, non obese Callum. Starting on the pastry section this week has led me to believe that I am actually addicted to desserts. In fact, on Thursday (after a one day stint at Clamms seafood), I had spent three days working on making, and eating, desserts. I imagine a fair amount of people would want a break from sweets. I instead had a dessert tasting plate at Ezards, ate macarons from two different patisseries, and then for dinner went to an all-dessert restaurant and had four desserts for dinner. I need help.

The Press Club’s most popular dessert, unsurprisingly, is Aphrodite. Not only is it delicious, but thanks to its appearance in an episode of Masterchef we get requests for it more than anything else. It’s quite a fun dish to plate up, as there are lots of elements and it is a little against what pastry usually stands for. Instead of rigid edges and every plate looking identical, there is a bit of an organic feel to the dish and no two are ever exactly the same. The mis en place (prep) can be a bit of a hassle though with eleven different components that need to be made!

It is always great to watch the customer put their spoon into the mousse and the raspberry centre oozes out. The dessert was actually created by Ian Burch and Darren Purchese, a couple of British pastry chefs who live in Australia now. From what I’ve heard along the grapevine they will hopefully be opening a dessert place of their own. I will be one of the first customers.

One of the really fun things about the pastry section at The Press Club is getting to play with liquid nitrogen. Combining my nerdy science nature and food makes me a happy fellow! We use it to make nitro-poached tzatziki merengues as an amuse bouche, smashing citrus segments into individual cells and a garnish on the chocolate dessert. In fact, my nerdy nature got the better of me on one occaion, where I got into a bit of an argument with a customer. He was trying to tell me that liquid nitrogen was -40 degrees Kelvin. I couldn’t begin to tell you how many things are wrong with that statement, but I’ll leave that for another day (for the record, it is -196 degrees Celsius or 77 degrees Kelvin).

I also spent a day at Clamms seafood, where I was to go to the fish markets and see the process of how fish gets from the boat to your plate in a restaurant. The midnight till midday shift was a bit of a shock to the system. The market was fun though, watching as various buyers would lose their temper at each other when vying to purchase the same seafood. It was one of the guy’s birthdays, so there I was, at 3:30am, singing happy birthday to a guy I’d never met in the Melbourne fish market. If you described the scenario to me a year ago, good chance I wouldn’t have believed you.

Adam and I hosted tables on Saturday night at Starry Starry Night, an event to raise money for the Alannah and Madeline Foundation. It was a great night, with a truckload of money raised (which is used for child abuse prevention, awareness, assistance to affected children etc).

Lessons learned this week:

  • The pastry section is obviously most busy at the end of the night, which means you can keep prepping during service, but it also means it is the last section to clean down and finish.
  • Fresh fish shouldn’t smell fishy, it should smell like the sea. Being in the fish markets, it was surprising how unoffensive the smell was. You would expect a place with that much fish to be overpowering, but it wasn’t bad at all. Buy your fish from a fishmonger that smells fresh. Look for fish with bright, full eyes. Filleted fish can be a bit trickier to work out if it’s fresh, but the flesh shouldn’t be breaking apart. I think you can also tell a bit by how it is displayed- is it neatly laid out or kinda just chucked in there? Do they care about their product? I knew all this before working at the fish markets but I think it’s worth mentioning.
  • I apparently have a never ending desire to eat. I don’t seem to get full like a normal person. I can’t help but feel this will probably catch up with me one day, but at the present time I seem to have metabolism like a fox.
