The bar for regional specialties in the US is pretty low and being inordinately proud about some hacked up, mutated version of a common dish isn't restricted to NYC. That said, I'd eat it.

Chopped cheese is aight. Not fuckin with a good cheesesteak but I feel like it’s harder to find a good cheesesteak in New York than it should be (at least it’s been for my drunk ass when I’ve tried).
They had this shit when I lived in Ohio a few years back and called it "party cut" - more like horse shit. there's literally nothing to hold on to with the middle pieces + each piece is like, a bite.
Chopped Cheese... looks disgusting. Philly Cheesesteak... is disgusting. Chicago Vs New York... both bad, just Chicago is the worst. American Cheese... it has its place.

The chopped cheese I've had always included a mixed in pickle and jalapeno relish of sorts. Great stuff, when done correctly its right up with a philly.
